Pumpkin Stew

Made for Samhain Celebration 2004 & 2005

This is an invention of mine, and because of that and the fact that I'm not the most organized person in the world, I forgot to write down amounts and measurements for the recipe. Nonetheless, it works out very well if you just estimate according to your taste. It's something fun to experiment with and it is to die for! I recommend serving it in a hollowed out pumpkin.

You Need:
  • Canned Pumpkin
  • Chicken
  • Dumplings
  • Pumpkin Pie Spice
  • Salt and Pepper
  • Chicken Stock
  • (optional) Potatoes and other veggies
Directions:
  • Boil your chicken in a large pot until cooked
  • If chicken is already de-boned, just go to the next step. Otherwise, now's the time to start de-boning
  • Now would be the time to add other vegetables if you choose
  • Add your chicken stock and canned pumpkin to the pot and mix well (for thicker stew add more pumpkin)
  • Add pumpkin pie spice as well as salt and pepper to taste
  • With your dumpling mix ready, begin scooping it into the pot until the top is covered with dumplings
  • Cover the pot and wait for the dumplings to finish cooking
  • When the dumplings are finished, so is your stew - just mix it altogether and it's ready to serve
