Lughnasadh Blackberry Cobbler

Best served with vanilla ice-cream - mmmm...

You Need:
  • 4 cups of fresh, rinsed blackberries
  • 3/4 cups of sugar
  • 3 Tablespoons of flour
  • 1 1/2 cups of water
  • 1 Tablespoon of fresh lemon juice
  • 2 Tablespoons of melted butter
  • 1 1/3 cups of all-purpose flour
  • 2 Tablespoons of sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1/4 cup of shortening
  • 6 Tablespoons of whipping cream
  • 6 Tablespoons of buttermilk
Directions:
  • Preheat oven to 350 degree F.
  • Place berries in a lightly greased 8x8" baking dish.
  • Combine sugar and flour.
  • Add water and lemon juice, mixing well.
  • Pour mixture over berries and bake at 350 degree F. for 15 minutes.
  • Take the berries out of the oven and increase temperature to 425 degree F.
  • Combine flour, sugar, baking powder, and salt.
  • Cut in shortening until mixture resembles course crumbs.
  • Stir in whipping cream and buttermilk.
  • Knead dough 4-5 times.
  • Roll to about 1/4" thickness on a lightly floured surface.
  • Cut dough to fit baking dish.
  • Place the pastry over the hot berries then brush with melted butter.
  • Cut a few vents in the top of the pastry with knife.
  • (Put baking dish on a baking sheet so you don't get drips on the bottom of your oven because they are HELL to clean off.)
  • Bake at 425 degree F. for 20-30 minutes or until pastry is golden brown.
  • Serve cobbler warm with vanilla ice-cream.
