(Yule Log Cake)

This is another family recipe. It can be tricky, but if done right, the result is both a beautiful and delicious dessert that has a perfect balance of sweetness.

You Need:
  • 6 eggs, seperated
  • 1 cup of granulated sugar (1/2 cup + 1/2 cup)
  • 1 teaspoon of vanilla
  • 1/4 cup of all-purpose flour
  • 1/2 cup of unsweetened cocoa powder
Filling:
  • 1 Tablespoon of instant coffee
  • 1 Tablespoon of boiling water
  • 2 cups of whipping cream
  • 1/3 cup of icing sugar
Directions:
  • Line a pan with foil and butter it.
  • Beat egg yolks till light.
  • Beat in 1/2 cup of sugar, blend in vanilla.
  • Beat in flour and all but 2 Tablespoons of cocoa.
  • Beat egg whites till soft peaks form.
  • Beat in remaining sugar.
  • Fold into batter and spread into pan.
  • Bake at 325 degree F. for 25 minutes.
  • When cake is done, sift cocoa over it.
  • Flip it into a tea towel (carefully) and roll it up. Cool
  • Dissolve coffee in water.
  • Beat cream and sugar, then add the coffee.
  • Unroll the cake and spread 2/3 of the cream onto the cake.
  • Roll it up again and ice the outside of the cake with the remaining cream.
  • Decorate by slicing off a small piece from the edge and attaching it to the side to make it look like a real log. Sprinkle with icing sugar to look like snow, and add a plastic mistletoe or holly to complete the look.
  • Store in fridge - but don't wait too long to serve as the cream will go waxy.
